I would be fascinated by the results if you got an audio test to find your frequency sensitivities. I cannot figure out how EA500 is too bright compared to EN700 Pro, based on graphs. What do you think it is that's too bright on it for your tolerance?
I've shared it actually in my first impression.

There's a nice deep between 6/khz to 9khz which takes away the sibilance issue. However the peak around 10/11khz might be too much for some. It certainly adds more texture but piercing sometimes...

I haven't compared graphs from EN700 Pro and EA500 but I take it from your post they are similar throughout the whole spectrum. If so, then perhaps it's down to the bass which is quite sloppy on the EN700 Pro with a slower decay than on the EA500 and so the EN700 Pro feels warmer overall.
Maybe so. EN700 Pro (from Super Review's graph) has SIGNIFICANTLY more early and mid-treble energy but also SIGNIFICANTLY more bass energy than EA500. So something in that balance is off for you, on EA500. Maybe it's as @brsdrgn says and that late treble energy is too much because it's not masked by anything?

indeed, i just try to encourage people test as much ear tips as they can....i find it odd that their only one ear tips model. which seem the only con i can find for now about these marvelous IEM.
I absolutely agree that having a good collection of tips is crucial in this hobby, as sometimes they can make or brake an IEM. Just yesterday I got the TRN T tips in the mail and I really like them. When I put the medium ones on the Kiwi Ears Cadenza and stuck them in my ears I felt as if they’re glued! Just when I thought the fit couldn’t be better than with the KBEAR 07.

Ah, so they don't graphs the same at all. Makes sense as my perception of EN700 Pro is that of a well balanced v-shape whereas I perceive EA500 as neutral-bright. The EN700 Pro, however, feels too bright to me too at higher volume.

TRN T is my favourite on Neon Pro, as you say they seal more easily. While large are closer to m/l. But since they are a little sticky it works anyways 👍 they give a tight bass response and nice open soundstage.

How cheap?
There were $400-500 USD mofasest Trio last time and I bit the bullet.

I have mofasest trio, the cheapest IEM with sonion EST but the "valley of trap" on 6khz is big caveat for me even though they have great layering (for their class), treble sensitive people will like the 6khz scoop, even HBB said he like that scoop without losing any details but for me, that valley kills so much details and energy.

TLDR = too safe for me on trebles and the bio cellulose DD sounded organic but not tight enough. Good parts are great layering, nice mids , beautiful shell.
*note : don't compare them with monarch mkII
Can't argue with you on any of this. This is exactly how the Mofasest Trio sounded to me. Lifeless and with negligible bass tightness. This is why I most fastest dump them at a significant loss.

Dissapointed by both Simgots I got lately, EA500 and EN1000 alike, they are just too bright for me. Was hoping for an EN700 Pro upgrade but nope unfortunately. Funnily enough I tolerate the Cayin Fantasy more even though it's brighter than both of these.
Where do you rank the IE600 on your list of single DD? I've tried purchasing two, but whiffed both times. They were sold before I could buy.

They're very good, amongst the top of the pile here, but a bit of hit and miss tonally for me due to the treble presentation, it works on some but not on others for me. I could say that for a number of other IEMS I have though. Let's say that if you don't mind the kind of treble spiciness they have, then you shouldn't be disappointed unless perhaps you need bass focus on mid-bass which they don't do.

Graph is Hisenior Mega5P in red and Junear 41T ibmn Blue
Taken from Akros on Facebook. He is probably out with youtube review in a while, I am for one very interested.
Looks like a detailed neutral IEM with good extension and no troublesome peaks.
