While the 680 is a great option for listening, I would argue that it's still not flat enough for production. But if you want headphones for that purpose, get what you like the sound of rather than make sacrifices for better production. It's better to choose which application is more important and base your decision on that than just pick a halfway point. Somewhere down the road you might be able to pick up a different pair for mixing and you'd be set for a long time.

If so, can you tell me some pros and cons about them because I am looking into getting them.

The thing is, ive always been producing using Sennheiser HD 202 and people always complimented about the quality of my sound. I actually have a release lined up for the next month. Granted, my budget doesn't really line up any kind of headphone that would produce studio quality sounds, but any headphone within my price range is definatly going to beat my previous one. So yeah, its a step forward. And I just want something thats worth it in the long run, and im pretty sure any of these headphones will do just that!

Ultrasone headphones have seriously good build quality and are very unlikely to break anytime soon.
 
The HFI-680 are an often overlooked model, one that might suit your needs reasonably well given that they're more balanced than other models on Ultrasone's line-up. However, you wouldn't go from by EQing them. Read this thread for additional info:

Have ever considered to walk the PRO route? I love my PRO 550 since 2 years now and today I received my PRO 2900. Listening to them from my Sony NWZ A845 right now. Thr PRO 550 can be used unamped as can the PRO 2900. The HFI line is more V shaped balanced and has piercing highs more than the PRO line.

I don't know what HFI you're using, but the 580's highs are MUCH tamer than the PRO 2900's.

+1 My understanding from experience has been that the HFI line was tamer than Pros I have tried (900/2900) which are harsh and sibilant, though the 2900 is an improvement over the 900.

I sold my HFI-2400 because of that in 2011. I was left with my PRO-550 and bought a Sennheiser HD 650 which has practically no height at all.The PRO-550 developed to be my Jack of all Trades for music, gaming, video and @ work. Even though the HD 650 is very good, as I am not in the game of carrying a portable rig that consists of DAP,DAC and AMP; I rarely use it. The PRO-550 works just fine from any device. The same goes for the PRO-2900 and as far as I remeber also for the HFI-2400. Then I came across an EBAY offer for a new PRO-2900 that started at 1€. I simply could not resist and got it for 246€ which is a very good price. Now I have it and from memory the high notes are not as piercing as the HFI-2400, but they are absolutely present. But that is just my opinion.

I have the Pro 900 and hated it at first for all the reasons others have listed.  Then I ran across the mods, tried some of those and now have my favorite phone for TV and movie use.  I still don't think I would like it for music because of the surround sound but I will have to try music again now that I modded it.
