I feel you're describing the Denon D2000/5000's, though they're long discontinued. You may be able to find a pair on the marketplace near your budget. Can't think of an in-production equivalent.

The HD600's are good but given the level of HPs and sound quality you're already used to you're not gonna get the "wow" that HD600/650/6xx give to others just starting their trek into hi-fi.

True, it'll give you less options but based on his use case it might be better to sitck to simplicity with built-in BT.

Almost any standard amp will work for this, though for best sound quality you really should be using line out from the ipad to bypass the built in amp.

If you set on using bluetooth from a phone, you can just buy a pair of powered speakers and attached them to a bluetooth receiver. A bluetooth audio receiver will run you about $20 and you can use the rest of the money on a nice sets of active speakers.

I would be wary of anyone telling you flat out that a pair of headphones is "better' because they're planars.   They're a different sound, which is up to you to judge if you do. I personally love me some good planars or dynamic headphones. Choose based on sound, not based on technology...

A magni or O2 are an easy budget amp recommendation, it's also good to just have a "cheap" amp around just in case you need something in a pinch or for travel.   I've got a nice little Gilmore Lite that I keep around and am very happy with. They're good for the money if you can find them...
