It's an alternative firmware. There are versions for several different DAP's. Rockbox offers many more options than most standard DAP firmwares (crossfeed, enhanced equalizer control, much more). I, for one, have tried it and prefer the iPod firmware because of its ease-of-use.

I've considered getting one of those so I can plug a mini-to-RCA cable into my iPod and send it to my home stereo.

If you plug your headphones straight into that you will not be able to adjust the volume. And (I think) the volume will be quite loud.
