Ive always been surprised at the disproportionate focus on frequency response vs time domain and find it fascinating how responsive our brains are to subtle differences in timing cues... And also that sensitivity to timing differences appears to be largely learned - some people don't hear it at all, whereas conductors seem to have heigtened sensitivity to such differences.

perhaps heat the water reservoir portion using a sous vide system instead of applying heat via a burner (control the bath temperature) for more consistent brewing. or will the rate be too slow?

The heat will be too low.

I have one with a stainless steel carafe, and like it. The heating unit is copper and adequately powered. It is well made and has not given me any trouble. Of course, YMMV. Cheers!

I've had mine for a couple of years. Stainless steel carafe. Highly recommended.

I recommend going nel drip. It tastes way better and doesn’t require the fine technique of the siphon.

Ah, a form of pour-over. I do that using a clever dripper if I want a single cup in the afternoon, but I prefer a carafe of coffee in the mornings since I drink several cups and thus a standard drip coffee maker is best for me.
