I don't use the R3 outputs, so I can't really tell. Mostly it's paired with the Tempotec iDSD Plus which I enjoy the sound more.

I would be very surprised if they had altered R3's sound signature by firmware. You have already options like EQ and MSEB for sound modifications. But cannot tell from real experiences as I use R3 only for feeding my Mojo.

You should have at least firmware 3.2 on your R3.

From the changelog, it says

2. Added the receiving function of Bluetooth AAC.

I don't have an iPhone to test, but I'm pretty sure it should work, unless the iPhone for some reason is preferring to use SBC over AAC with the R3.

Nope. The V1 doesn't have UAT yet.

The latest firmware for that one is V1.2. There is also no changelog.
