I also roughly measured its fr response and the 5kHz peak does exist. Response is similar than Tyll's measurements indeed. But the fact is I don't hear this peak. I tried 2 soft anaxilus mods without success, they killed too much details and fluidity. IMHO these Sennheiser "diffuse field" measurements give a close approach of what I'm hearing.

Look's flatter than a Florida highway to me.

I just had to reply to this, since I've driven on Florida highways!

My friend always tells me about how his HD 800 is so neutral, and these graphs are pretty reassuring.

  Here is mine:

What do you think?  is it too bright?

Yours ears will tell you but the result could also be affected by your source and amp.
Personnaly I finally ended up with a variation of the anaxilus mod which gives satisfaction. The material I use is sort of closed cell soft foam without felt (same width as the metal ring) and a little piece of this same foam partly covering the plastic part.
So I don't loose the airiness and top octaves I lost with my previous mods (felt pads).

I love my HD800.  Of all the can's I own it's the one where I'm not analyzing the sound while I'm listening.  I love my Stax Signature 4040 system as well  but to my ears they don't disappear quite as much...

Has Germany ever engineered a poor product?

For whatever reason the scale is different on my pair.

Definitely a good thing. The HD800s are getting the kind of individualized attention that makes them works of art. Each has been fine-tuned by human hands. Kinda like EGL Certification for diamonds. I can't wait to see mine.

After seeing a factory tour of Sennheiser I got more the impression that they have a machine that test the frequency response of each of the HD800 drivers, then they just match 2 drivers with the same frequency response, and those are what become your HD 800.
