As per Sennheiser:

The HD 800 family of products no longer include frequency response certificates as of May, 2023. If the second and 3rd digits of the serial number on the packaging (which represent week of manufacture) are 14 or greater (15-52), there is no record that we can use to generate a certificate.

So that settles it, If you have a newer set there is no frequency response certificate for you.

That does beg the question as to whether they actually measure them anymore….. The frequency graph, as I e understood it, was simply a measurement of how any individual unit differed from the ideal. I stand to be corrected though……

An educated guess is that it is most likely a cost cutting measure to streamline production.
But if they measure them it’s trivially easy to save the measurement details. They were never provided with the headphone previously, so there is no saving in not having to produce a measurement sheet. They were always only available on request. How much time and money does it cost to save the measurements?
