As the post above mentions, the graphs are way too simplified to be of any use. Here's mine from years ago. No 6k peak.

Wonder why the graph is stepped ...
Every step is a single measuring point that is stretched out. Probably they measured it at the middle of each step. Thus the graph is basically useless.Wonder why the graph is stepped ...

How does one obtain the frequency response chart?
The current produced HD 800S doesn't come with it included in the box.

Then you don't get a chart. They stopped making them. It's a useless piece of paper anyway unless they change the way they do itHow does one obtain the frequency response chart?

Email Sennheiser customer support with SN and model. Took them about a week cause of holidays but normally 1-2 days. How does one obtain the frequency response chart?

That's great customer service. However ... Why would one want that graph anyway?

As per Sennheiser:
The HD 800 family of products no longer include frequency response certificates as of May, 2023. If the second and 3rd digits of the serial number on the packaging (which represent week of manufacture) are 14 or greater (15-52), there is no record that we can use to generate a certificate.
So that settles it, If you have a newer set there is no frequency response certificate for you.

That does beg the question as to whether they actually measure them anymore….. The frequency graph, as I e understood it, was simply a measurement of how any individual unit differed from the ideal. I stand to be corrected though……As per Sennheiser:

An educated guess is that it is most likely a cost cutting measure to streamline production.

But if they measure them it’s trivially easy to save the measurement details. They were never provided with the headphone previously, so there is no saving in not having to produce a measurement sheet. They were always only available on request. How much time and money does it cost to save the measurements? An educated guess is that it is most likely a cost cutting measure to streamline production.
