I'm in a shared office environment now, and the person I'm sharing with coughs, a lot. So, the open cans I was using aren't a very good fit. The biggest concern is to block outside noise; I can always take them off if someone needs to talk to me. Also important are fairly deep cans that will accommodate larger ears.

I'm mostly listening to Jazz music (nothing particularly intense, as I need to focus on what I'm working on), and I have an M-Stage amp.

I'm opened to used headphones, so keep that in mind when making recommendations.

Best ones that come to mind are the Beyer DT770 (or T50p if you don't mind earpad rather than cups) and the Denon D2000. An Ultrasone Pro model might also work for you.

D2000 isn't really a closed can and doesn't isolate much at all, not a good choice for a shared office environment.
Consider closed cans like: Audio Technica ATH-M50, Beyerdynamic DT770, Sennheiser HD280pro or HD25 1 II, Shure SRH440 or SRH840, Denon D510 or D1100.
