Is it difficult to make your own cable? I remember not being able to find any decent how-tos. I used to make my own Ethernet cable so I'm not completely incompetent ;/)

Pretty easy to make headphone cables once you have a decent set of tools to work with but the more you practice the easier it gets.   There is a thread for DIY info: http://www.head-fi.org/f/6/diy-do-it-yourself-discussions
Check it out, I've found some good info in these threads.

3rd party stripper? What'sthat

You can use a forwarding agent like Mister Tao or similar. Expect the final price to be ~$50 or more though due to shipping and handling fee. You also has no buyer protection this way.

Apologies if this isn't the right place to ask...any advice on where to purchase these? I just got done paging through a horror story thread on Reddit about QC and RMA issues with these and it's made me a little nervous about pulling the trigger.

You should buy them from Razordog.  https://www.razordogaudio.com/collections/hifiman/products/hifiman-he-400i-full-size-planar-magnetic-headphone-open-box

Trust me, you will never have any issues with the Hifiman headphones from Razordog.
