What kind of cheese do you have on your Philly cheese steak?

As a NJ native I feel qualified to put in my two cents. Cheez Wiz is plastic cheese. If that's what you use it should be called a "processed food spread & steak swndwich". Provolone is the way to go.

Typical order here in Philly...

"Fried onions wit."
Translation: A cheese steak with friend onions and Whiz.

Now, my order (at either Jim's or Ishkabibble, both on South St.)
"Fried onions with American, hots on the side."

My wife does prefer provie on hers.

We have a couple philly steak places out here. One of them also has a killer meatball sandwich.

I'd say I like mine with any of: provolone, swiss, sharp cheddar (medium is acceptable but not preferred), pepper jack

Love the Pat's wrapper and the side of cheese fries (with Whiz, of course) I could have started a thread about the Jim's/Pat's/Geno's question, but I was afraid people would kill each other. I was always a Jim's man, but Pat's was always welcome. Only went to Geno's once.

Provolone or Whiz depending on my mood (usually provolone).
Onions, mushrooms, peppers if I'm in a "healthy" mood.

Jim's or Geno's. The last time I had Pat's it was cold and the mushrooms were disgusting, never going back.
