What are the most upgradeable headphones. The Denon's have the J$ pads, and markle mod; and the Sennheiser's have all those cable upgrades. What do you think?

I'd say the best scaling headphones would be a more sensible question to ask about, that is, the headphones that keep increasing in performance as the associated gear does.  For that, there are only a couple of pairs of headphones for which the upper limit is something like $5000-10000 worth of amp and there is no limit on the source.

Vintage orthodynamics. I mean have you seen the giant thread? Over 1000 pages discussing different felt.

And technically, you can make new pads, add dynamat, and recable any headphone. The Denons and Senns just have fancy names for them.
