I can report that it doesn’t resolve the LDAC compatibility issue with Samsung phones (the snapdragon ones).
Also, I’m somewhat surprised that version 0.63 removed the ambient sound function.
Can I download the 0.58 version somewhere?

That's a Samsung issue they use their own proprietary codec
I’m updating now on the older model and it seems to be installing. Can report back if it installs properly.
I have just tried on the older model, local update since the online was telling me I am up to date, and it failed.

So this new update what does it fix?
I also had the buzzing/chirping in the right ear in ambient mode. I got these specifically for the ambient mode feature, because I need to be aware of my surroundings when listening for long periods of time. Saw the new FiiO app removed ambient, so I downgraded it, activated ambient and discovered the buzzing/chirping. Downloaded the .63 firmware and now there's no ambient mode at all. Can't even activate it in the downgraded app. Newest version of the app, of course, doesn't show the feature at all anymore. Is the feature busted and being completely removed, or are they working on a fix? I'd like to know, so I know whether to return them.

I can’t fathom why they turned this feature off. I used it actively and liked it very much.

I also bought the UTWS5 specifically for the ambient mode, very disappointed that it's removed.

Yes. It's enough. But again when Fiio released the update for utws5 OG, they put this information in the bottom saying:aptX and LDAC are more than enough for me, if LDAC worked fine.
And guess if the 'best phone ever' is there? Nope. Here's a list of brands :
What does that mean? Having only LDAC is not the end.

LDAC wasn't even there in the two earlier version. Fiio didn't even "promised" if they will bring LDAC to it, but some people here whining about it ("Oh, I won't buy UTWS5 if it doesn't have LDAC" or "Oh, I wish LDAC is there so that it will sound BETTER" - LMAO), so Fiio somehow decided to add it through firmware update. It was still in BETA back then and many people were having problems like what we are having today.
Apt x is enough ldac just drains your battery.
