Are there two different model numbers for differentiating purposes? If I were to buy it direct from the manufacturer, would I be left with the "underpowered" amp or the one people expect? I don't want my money to be gambled...

Nope, the only way to tell them apart is the size of the cut-outs.  One has smaller cut-outs and can't accomodate fat bottle tubes or Woo's 7N7 adapters.  The latest version has large cut-outs.  A Head-fi DIYer makes adapters for the older version, which equalizes things.  
 
But you may run out of volume/headroom on both versions, the K701/2s are just tough to drive, at modest listening volumes this isn't an issue, but if you want to crank it you may run into problems.

I'm not sure if I read that correctly but what I inferred from your post is that Woo used to make amps which were actually incompatible with their own adapters, and then respun their design so that they would fit properly? In that case, buying new from Woo directly should leave me free and clear I would imagine, correct?

The adapters are the latest thing to come out, and they won't fit the older Woo 6's, that's all I was saying.  And yes, if you're buying a brand new Woo 6, none of this matters.

Wouldn't the Shiit Asgard with their forthcoming DAC (Bifrost) be an option? It's specs are great...  About 700$
You should wait some time though until they start to ship their first dacs so we can read some reviews...
I am waiting to learn about it (the dac)... actually I am very very curious ...!!!!
 
Actually I already own the Fiio E9i and I am thinking of getting the 701s ... until I can get my hands on the Shiit sh.t

the Bifrost will run $450 tops, and that's only if you want a USB-in in addition to optical/coax. Where'd you get $700 from?

The k702/m-Stage/uDac was one of my first rigs in this hobby that really opened my mind to better sound. I would recommend that in a heartbeat, or using the Music Streamer II instead of the uDac2. Even though I later got a much more expensive setup costing about $2300, this first rig still held it's own VERY well. I hope to someday try the AKG out on a Lyr as that seems to make a fine pairing as well. Also, burn in that K702 for a few weeks!!!!!!  My .02

I believe he was saying the Bifrost + Asgard, so $450 + $250. Though I think Schiit themselves would be the first to say the Asgard doesn't really get along well with the K70x. I have a K701 with a HRT Music Streamer II+ into a Schiit Lyr and enjoy the set up very much. I did hear the K701 through a Fiio E9 and also a LittleDot (can't remember which exact model) a little while ago. I remember thinking the E9 wasn't bad, but the LittleDot and Lyr were noticeably better.

Lyr is $450 msrp and I believe the E9 is $130. As with anything try before you buy if you can. I've heard a lot of people say they like the K701 with the Lyr. I definitely heard a difference over the E9. Whether that's worth $320 is a personal choice though.

No one knows yet cause they don't start shipping until the end of August. I assume there will probably be some review samples to go out before that, but it's a waiting game until reviews start coming in. I can't imagine it's a bad DAC. Schiit has consistently shown to be a good company with good products at decent prices. We'll see if it's worth the price of admission though.

Ahh whoops haha it totally slipped my mind that it was a preorder and it's not actually shipping yet. Well I suppose it's all for the better. The way things are looking now I'm going to be increasing my budget anyway so I might as well keep my options open!
