When I had the AD700, I didn't think the mids were very forward, the headphone had a slight U-shape. For what you describe though, I would recommend Vsonic GR04. Vsonic GR06 is similar but with more, and very clean, bass.

+2 for the Apple in ear, just be very cautious for fakes.

Likewise I have not heard the ATH AD700 . . . but from what you are describing I would suggest Fischer Audio's SBA-01 IEMs.  In terms of "forward mid and good treble" for "acoustic and classical music" while on-the-go, they are my preferred pair.

I'm not sure if it can be had for $70 outside of eBay, but you never know so I just thought I'd mention it.  I suppose Fischer Eternas are also a good fit for you.  ClieOS has both covered in the following thread if you want to know more about them:

For classical some have been recommending the Sony XBA-1 BA IEM.It is around $70. I don't have it yet, but am thinking about buying it. http://www.anythingbutipod.com/forum/showthread.php?t=69435 If you want to get something cheaper, the $20 JVC HA-FX40 and $20 Panasonic RP-HJE355 have great clarity and detail. The HJE355 has a somewhat warmer sound balance, while the HA-FX40 has a brighter balance. They are both great for classical music.
