Break-in
I am not a believer of all the break in BS either. I think its a matter of hearing something for long enough and getting used to the sound. The guys over at Audioholics have some good articles about it.- ChrisAllen

why do headphone amplifiers not have balance controls?
I struggle with the same issue. I've tried several very high end amps and ended up selling them because I couldn't get over the imbalance. I just picked up a Cary 300sei and the balance control works with the headphone out. I'm loving it.- ChrisAllen

You could pick up a used Oppo HA1 and use it as a very capable pre amp going into a cheaper emotvia power amp. There are some quality used power amps to be had in the 2-300 dollar range. I've owned older bryston and classe power amps in that price range.- ChrisAllen

Some Help With Selecting the RIGHT pair of earphones.

sennheiser hd 700 bass is overpowering - wasted money on them , they suck
This sounds backwards...I always thought my Hd650's were more bass heavy and darker than the 700's. With that being said I never understood all the hate for the 700's, they're super reasonably priced these days too...- ChrisAllen

I made the mistake of trying the 535's and the 846's at one of those airport wireless stores. I was quite happy with my 215's but I ended up walking out with the 846's, I can't say enough good things.- ChrisAllen

Help choosing headphones
I think you have a pretty good list there. I would consider Sennheiser HD600's or something along those lines, I used to game with mine all the time. But they will require amping, so will those Beyers though.- ChrisAllen

Cans vs IEMs
I would go for something like a Shure SE215. Affordable and super portable. You'll notice a difference with the amp but on the go its not strictly necessary.- ChrisAllen

If you feel that there could be an improvement there are plenty of affordable headphone amp/ dacs that you can try. If you have the means the headphone world is quite fun. The Fiio could be a great choice, but be careful...this hobby can snowball quickly.- ChrisAllen
