Do you already have the original album where the sample is from?
 
Another hot tip is to hunt down records by The Hilliard Ensemble.
The cross-over albums they did with Jan Garbarek is particularly beautiful, I think.

I really enjoy this album-Mark Lanegan-Blues Funeral. He was the singer/songwriter for popular grunge band-Screaming Trees. This has a much more singer songwriter blues/accoustic/rock vibe.....kind of Jim Morrison meets Tom Waits with a touch of Robert Cray. It gets my vote for one of the best rock albums of 2012.
