As far as I know:

The goldies still have the 'old' skinny headband, seems like the newest SR325i have a wider headband.

It seems like the wire on the newest sr325i models are the same as the RS1i.

from Grado website:

UHPLC copper voice coil wire
UHPLC copper connecting cord

for SR325i and up, for SR225i/SR125i it is:

UHPLC copper voice coil wire
Standard copper connecting cord

and for anything under those models:

Standard copper voice coil wire
Standard copper connecting cord

I'm not 100% sure about the older models but I would venture a guess saying they also have better cables.

For any and all crazy gringos who've woodied their 325s, what kind of SQ changes did you experience?

The sound quality looks exquiste.

Could you describe the specifics of what changed as you went from metal to wood?

yes, please do. Don't forget to mention what type of wood you used

O.K., you caught me out.  I detect no change in the sound quality.  I love the look of the cocobolo.  The can is lighter, of course, but I never considered the 325i to be a particularly "heavy" headphone.

I agree with what you say about the sound not  changing when I did my 80i's, with the exception that maybe the bass/precussion was a bit set back and less impact, just a little bit. So to begin with the 325's sound excellent anyway so you can't go wrong with the beautiful wood you have on them now, their beautiful!!! And I don't con side the 325's heavy with the aluminum cups either, I think they are very, very comfortable.
