for example the denon ah-d1100 has two cords one on the left and right side.....is it detachable?

Is it better for sound quality? easier to replace? etc? more annoying?

unlike the Sennheiser HD25-1 or AIAIAI TMA-1 that has one chord on the left or right.....

whats your preference?

The difference is cost, (I'm Guessing) Costs less for them to use two separate cables and make them non replaceable, than to wire the headset internally and make a jack connection for the replaceable cord.

It's definitely not replaceable if it has a cord leading to the right and left cups, as the wires just go straight to the speakers. It doesn't add or take away anything from the sound the speakers will be putting out.

For the AIAIAI TMA-1's, the cable is replaceable and can be taken out or even replaced with any 3.5mm to 3.5mm connection. It wires the cups together inside the headphones so they only need the audio-in signal from one side. It is used in most serious headphones. Generally makes them easier to use, more portable, and more versatile, but doesn't add or take away from the sound.

Hope I helped, if I'm wrong, point it out.
