Really nice review! BTW I recall reading the MM-500 pads utilize adhesive. Is that problematic if / when one needs to replace them?

No, the new Audeze pads will come with pre applied adhesive. You just pull the old pads off and stick the new ones on. Alternatively, if there is a defect in their application, you can send it back to Audeze and they can replace them for you.Really nice review! BTW I recall reading the MM-500 pads utilize adhesive. Wow, I thought they were going to not do that after the complains that people gave them for their LCD-5sYes.
Perhaps this helps a bit to reassure the glued plugs issue is not a dealbreaker, but perhaps not. Certainly each individual decides what is a deal breaker for

That's quite disappointing, so my older design cheaper LCD-X has proper screw in plugs?

One aspect that no one has seemed to mention AFAIK is that the MM-500 has a 90 mm driver diaphragm. A whole 16 mm less than the LCD-X.
Does this difference show up in the sound at all? How does it effect the bass performance? I'm a sub bass head, and I admit it so I need to have that LCD-X bass power with all of it's EQ-ability and innate punch and slam. I wonder if the MM-500 suffers in this area?
Anyone know?
