  My HE-560 measures at 38 and 39 ohms, which is close to the supposed 35 ohms impedance.
My box came out good and so did my headphone and pads, so I got lucky I guess...
My only nitpick so far is the soundstage being a bit on the smaller side overall, but I am starting to warm up to it + it is still a bit of the expansive kind at least

Yours is equipped with the Focus pads or the Focus-A pads?

Retail Focus pads. Focus A still awaiting shipment.
 
EDIT: I guess roomy wasn't the right word... I dunno, I have big ears but the pads feel comfy and breathable and my ears just fit snugly in.

HD600 empirically has a heck of a lot more harmonic distortion in mid-bass, so indeed bass quantity would be more, just not what you think it is.

OK, but the bass of HE-500 and LCD2 was significantly more than the HD600 as well, which already feels stronger than the HE-560. Do the LCD2 and HE-500 suffer from similar issues as well?

For measurement purposes my Focus pads measure roughly 5.3 - 5.5cm in width and 5.7 - 5.9cm in height.

I took a break from listening to the new HE-560s and spent most of yesterday using my HD800s. I still find the HD800 a tad more comfortable, but the HE-560 is amazing. Definitely my 2nd most comfortable headphone. I was also listening to some of my favorites on the HD800 and thought I'd try the same playlist on the HE-560s - this one stuck out - amazing sub-bass, but then again, it's the same on the HD800s:

Everybody needs to get Adham Shaikh Refractions Vol 1. Trust me, go to bandcamp.com and I think this is a pay what you want album for lossless download! Very, very good electronic album actually quite musical. I guarantee you at least 3 or 4 tracks you love listening to your 560s with.

I love that James Blake track for sub-bass as well.  I have listened to it many times on my HD600 and at 2:24 I noticed something I had never heard before on my 600's - the bass note actually transitions to a slightly lower freq. at the end.  Amazing tonal definition and extension.

I can hear that transition to the lower freq. on both the HE-560 and my ten year old HD600. Is your HD600 well powered?
