I'd recommend these scores if you like thematic material:

John Williams - Jurassic Park, Indiana Jones and the Last Crusade

James Horner - The Land Before Time, Titanic, An American Tail, Willow

John Barry - Dances With Wolves, Out of Africa, The Scarlet Letter

Joe Hisaishi - Spirited Away, Princess Mononoke

Angela Morley - Watership Down

You can actually tell the types of scores people like just by reading who composes the pieces.

For  movie soundtrack I'd go with Goodfellas or Pulp Fiction

For game soundtrack I'd go with Alan Wake(Roy Orbison Rulez!)

For movie score I'd go with Willow(James Horner)

For game score I'd go with Metal Gear Solid 2(Harry Gregson-Williams)

You really have to hear Francois de Roubaix for killer soundtracks: http://www.cduniverse.com/productinfo.asp?pid=7263818

It's also funny how some movies like Enter The Dragon/Macadam Cowboy sound far more impressive when watching the movie than to the soundtrack only on a (remastered) CD IMHO...they are too tied to the movie to be taken apart.

OTOH, some movies made in the late 60's had soundtracks that were way too visionary...It'd be like listening to something recorded in the 90's mixed w/ a 60's movie. That's how Francois de Roubaix sounds to me.
