Someone asked me to measure the earpads so might as well share on the thread as well in case any one else needed this info.

Does anybody have insight on aftermarket cables (with or without mic, already looked at eBay, cable connection is quite recessed so not all cables will work) or replacing the ear pads on these? Just got a new pair of these and the mic cable is really finicky (e.g. crap at maintaining a quality connection). These also seem much less modifiable compared to my AH-D5000.

Cables are crappiest I've ever seen on this headphone.
If you have access to a dremel, you grind a tiny bit of the plastic away to accomodate a 2.5mm to 3.5mm adapter like this.

At m40x cable works too but you still have to grind the plastic

Are the ear pads even removable? If so and they have that dedicated lip next to the ear cups (like the Denon D1100, D1001, etc.), then there are plenty of of oval ear pads here:

As for the cable and you don't have tools to make slight mods, then check these out (connector pictures vary, but none of the seller's neutral/negative feedback from the past 12 months mentions the Denon D1200, so you are good-to-go on that note):

They seem like they would be difficult to remove. I'm not even sure if it's intended, which is a bit unfortunate considering the MSRP of these headphones. Ear pads eventually break down, so if these can't be replaced, that puts a finite time line on the longevity of these. Not that I'm complaining for the sub-$100 price I paid, but if I'd paid more, I'd be rather irritated.

This review claims the ear pads can be replaced, but I don't know the secret incantation to remove them yet: https://www.headphonecheck.com/test/denon-ah-d1200/

Before you buy any cables or earpads...

I can tell you all those cables probably wont fit.

The 2.5mm to 3.5mm adapter is very slim and that won't fit into the jack without trimming the plastic. I use my 2.5mm cable from my m40x and I had to trim it with a razor to make it fit, its still snug.

The only thing I saw available is something like this on aliexpress but this seller is away for Chinese new year and his store is closed and it costs $30 for a crappy cable.

Note the extended plug.

Yes, the earpads are "replaceable", but they are glued on to a plastic frame and is connected to the earcup by a series of little plastic tabs. It was fairly easy to take off but you risk damaging the tabs every time you take it off if you don't do it a certain way.

If you can't find replacements with the plastic frame, I suppose you could just cut the stock earpads off and fit your own earpads but the material has to be thin enough so you can pinch the earpad material enough to press the frame back into place with the locking tabs.

One last thing, once you remove the brown screen covering the driver, you expose the screws. All the screws on this headphone are damn torx heads to fall in line with the headphone's "for Ipod, Iphone, Apple produtcs etc" (if you ever repaired an iphone, you know what I mean). So unless you have a set of torx drivers in your toolbox, you'll need to spend another $7-10 on a set. The brown driver screen is also glued on, so you'll need to reglue it after you're done tinkering.

Its a nice headphone but I don't know if its worth spending that time and money on a $60 headphone. Although, I could be wrong maybe its a hyperresponder to mods, I'll let someone else get the first crack :)
