If you're going to take off the rubbery sheathing, then you might as well take off the shield as well. The shield won't provide any benefit and removing it will reduce the weight and increase the flexibility of the cable.

I don't think you're going to get a step up from the ES7's if you're only spending $150.

Take Five Audio sells 28 AWG solid silver and copper Jupiter brand wire with cotton insulation. That would work well for a headphone cable.

IIRC, the bass would be less because of the large gauge. Try some 28 or 30AWG.

Recables that cost hundreds of dollars go best with headphones that cost thousands of dollars.
