I need to recable the ginormous, annoying stock cables of the Grados. What is needed to recable it and perhaps add a removable wire? I'll be using a 1/8" since the headphones are easy to drive and don't need amping.

If you want a shorter cable, simply cut the stock one to length and reterminate it with a 1/8" connector.  It's a lot easier than opening the cups and rewiring the entire thing.
 
If you want to reterminate, you'll need a plug, scissors, wire stripper, soldering iron, and solder.  There are cable-building tutorials here (check the Wiki) where you can learn how to connect the plug.
