I decided to not buy it yet.. I will go with sundaras as I never had planar headphones.
By the way, do anyone has experience with thomann.de?

Thomann is great, go for it.
With the Sundaras you'll also feel better with their extended 3-year warranty since many people are complaining about their pads falling apart.

I am happy with my 560S and don't intend to upgrade, but what would be the theoretical next step up - the Sundara? Seems the 600 series are perhaps slightly better in some areas, but not worth 2x the price.

Yes, the Sundara is the next clear step up. It outperforms the 560s in almost every area with the only exception being FPS gaming in terms of sound. Looking outside of sound, the HD 560s is most likely going to be much more reliable than the Sundara is known to have been, which is the biggest concern with the Sundara.

sundara measure like trash just saying. anyone got an excuse for how poorly they measure?
