Probably the Sony MDR-V6 is the most widely used, but i suspect many people have their own preferences.

Most recording studios don't use super high quality headphones. Most use the Sennheiser HD280's and some AKG's. It's the rest of their equipment that actually costs quite a bit.

Sound engineers (e.g. running sound for major concert halls and the like) generally use better headphones than most of todays studio guys.  Which level are you after?

AKG: 140 sextetts, 240 sextetts, 240DF, 240 studio, 271, 601, 701/702

Beyer: DT48A, DT48S, DT48 negra, DT880

Pioneer: Monitor 10

Sony: V6, 7506, 7509, CD900ST

Sennheiser: HD600, Linear/Linear II

Audio-technica: M50

Fostex: T50, T20, T50rp, T20rp

this all i know of on top of my head. most listed are discontinued though but still can be found. koss, sony and beyer are the only ones still producing their older models.

I'd second the opinion that the Sony MDR-V6/7506 is the most common headphone in recording studios, although some other models are also common. I've personally seen a lot of AKG K240-family monitors being used, as well as the Sennheiser HD280 PRO, which seems to be pretty ubiquitous in Europe in particular. With all this said, I don't have access to actual statistical data, so I am just summarizing what I've seen at the studios I've worked at or been to, and from conversations with studio employees. 
 
Personally, I use a Beyerdynamic DT250-250 Ohm and couldn't be happier with its hyper-neutral sound. I am not a sound engineer though, I edit video.

I've personally seen a lot of AKG K240-family monitors being used.

dang it. i can't believe i forgot those when i mentioned akg's stuff. the monitors are still made i believe but need to be specially ordered. the 240DF's though, that started same time as the monitors are completely discontinued. i believe DF's stopped production around 2002 completely and no longer can be specially ordered anymore.

The amswer is sony, no other, here in asia, sony cd900st is used in almost all studios, while in europe or north america, maybe they use akg decades ago, but start in 90's, they been using sony.

Beyerdynamic DT100. As far as I'm aware, they are the industry standard and have been for several decades! Every part is user-serviceable, and they are utterly dependable. They give artists an accurate sound which they are usually familiar with, and they provide excellent isolation. You will see their distinctive big grey rectangular shape in pictures, films, and in reality, almost everywhere! My first studio headphones were Beyer DT100's, and they are still plugged in now, faithfully ready for use many years later, despite an unbelievable amount of abuse!
 
Edit; The DT100 is certainly popular in the west, especially Europe, but from other posts it looks like the situation is different in other parts of the world, eg Asia.

I've seen a lot of Sony and AKG as well as Audio-technica(ATH-M50) used by famous artist. But Sennheiser headphones such as HD 25 and HD280 is very popular in broadcasting and Radio station seen them while visiting some Radio station for live recording of my piano Music.

I have seen only three firms in very common use: Sony, Fostex, and Shure. The models I've seen the most are Sony MDR-7506 & V6 (and, occasionally, V900HD); Fostex T20v2; and Shure SRH840. The first two Sony are the most popular, maybe because they're the cheapest and can be most easily replaced.

Not forgetting the popular MDR-7506 Sony for decades, i've seen them in Churches, recording studios, and some serious orchestral recording as well, because its very cheap indeed but too bad its been replaced with 7502!! Must try
