Spent a bit over 2 hours at Moon Audio last Wednesday and tried a lot of cans. Everything from the Utopia 2022, lcd-5, Clear MG, lcd-x, Empyrean, ether 2, rad-0. The Empyrean were my favorite by far. My mother loved them as well, but also liked the lcd-x and the ether 2 as well.
Not to get into a cable debate, but I picked up a 3rd party silver cable and I prefer it to my 3rd party copper cable I'd been using with the Empy, which sounded pretty good. However, the silver cable sounds cleaner and more refined. Bass is tighter and treble is smoother but as detailed without any unpleasant change in overall tone.

I just ordered a WyWire Platinum that I'm looking forward to trying out with both the Empyrean and Elite. In my (albeit limited) experience, I prefer copper, but I'm open to trying out a different flavor.
I just recently got an Auris Nirvana for my main amp-- listened with the Empyrean last night-- glorious.

I tend to prefer copper but I've been enjoying the FD7's stock silver cable so much that I was keen on investing in more of that instead of a SPC 1st party cable, as nice as that thing is supposed to sound. The silver cable on eBay turns out is cheaper anyways
To be sure. my experience makes me think that cables do matter, and silver is worth it for gear that has the technical ability to show the difference.
@Apos Audio has a sale right now! You can get the Empyrean for 22% off and you can get it for $2340 with a free Apos Audio Flow cable. Here's the full Meze lineup that's on sale:
I like this headphone so much I couldn't resist a Black Friday sale and went and ordered another pair. This time in a different colour configuration. Hmm, which looks better-- jet-black, or copper? (I wish they made that cool black/dark red version more available. Alas).
