Moby recorded 18 to be listened with headphones, that is about as good a recommendation as any in that respect. I'm partial to Underworld myself, but that 18 album does sound blissful with cans.

Currently I would say the MFSL version of 'The Wall' by Pink Floyd as the 1 album I would listen to.
