So, i have decided to buy a new headset. I googled my way to these:

Music is very important to me so is obviously the quality, i would gladly spend 399 euros to improve my life, however i also found these:

Is the quality of sound big between these two? Is it worth getting the one for 400 euros over the one for 30 euros? I listen to musc 6 or 7 hours/day, easily 12 - 13 hours on a Friday/Saturday/Sunday. Jazzy house, deep house, liquid/soulful DNB and some crossover/fusion jazz.

I want to buy an amplifier, what do i need to use an amplifier?
 
I have been looking at this one:

Is this all i need or do i need any cables? Could you please post link to what cable(s) i would need?

For what you're looking for, the Denon D2000 (and D5000) are excellent for your genres of music; extremely comfortable too. The D5000 is hands down my favorite for a lot of jazz and EDM that calls for warm gooey sub-bass.
 
I would not bother with the Fiio E9 for an amplifier; it's beyond overkill for any of these headphones which are all very efficient. You don't even need an amplifier. However, if you want something, I would suggest looking around the house for an unused AV receiver; it will function perfectly fine for headphones too. Grab a used one at a garage sale even. Or, look at things from Fiio like the E10 for home use for these kinds of headphones.
 
You will not need any special cables at all with the E10 and a set of headphones.

Where is the connection between the amp and computer? Would that be the AV receiver?
 
 
Also, is the difference between the D2000 and AHD510 big enough to spend 370 more euros on it? Like i said, music is VERY important to me, but if i can barely notice any difference i would obviously go for the AHD510.

The connection would be that the Fiio E10 (and yes you're link is the correct unit being described) is USB. The signal and power are all delivered via USB to the Fiio E10, which then outputs directly to your headphone. The E10 is the DAC and AMP all in one nice little unit. An AV receiver is the same thing, both a DAC and AMP, but a lot bigger, and more expensive and designed to work with more than just headphones of course.
 
I don't have experience with any of Denons new line of headphones, they just came out literally. But the D2000 is a classic staple, and frankly, I wouldn't spend 370 more of anything beyond the D2000 in the Denon lineup unless going absolute high-end (like the D7000 or new equivalent). That said, I prefer the D5000 (which is actually just a D2000, same drivers, but different cups and different cable, and they cost a lot more even though they're virtually the same; but they sound difference, the D5000 has more bass/warmth and better mids to my ears and I just like the luxury of wood).
