Depending on what sound you look for.
Silver for both ends.
Coper for mid/vocal weight.
Gold alloy for overal improvement.

Check the DYI forum cable threads and ask if there is a guy in EU who will make cables for you.

I make RCA and XLR cables, but I don't make headphone cables.

I like building cables, I find very calming. If you want to start building some, just get the cheapest materials you can and practice a bit and once you feel comfortable move on to the expensive stuff. Eventually you'll be a pro at it
