I can confirm that the EML & Carbon 2.5's sound good together. It's an extremely bright pairing with new tubes but subsides fairly quickly. You wont hear them at their best until about 250 hr's.
The Sophia's and EMLs are both excellent tubes. I would say the EML is more polite but possibly more natural and, I suspect, just a better made tube. The Sophia is a little more lively. And, of course, this is all based on the quality of my hearing and my preferences. And I always want to remind folks I listen through LCD3s.
I have both sets of tubes and have no interest in getting rid of either. For the ultimate in tube lushness try the EML mesh 2A3s with EML mesh 5U4G.
I clearly notice the difference with a variety of tube combinations in the Stratus. My current set-up is Sophia 300b 2.5, KR/RK 5U4G and Ruby Tiger 6N1P. To my ears, the KR/RK 5U4G is a great balance between the fullness of the EML 5U4G and the clarity of a U52. And the Sophia 300b 2.5 is a great balance between the liveliness of the Psvane WR2A3 and the fullness of the EML mesh 2A3.
Honestly, I don't have a favorite set up anymore. At this level of tube quality one tube isn't necessarily better than another - just different and more or less suitable to the rest of the gear chain and one's personal preferences.

Not sure if my previous post had posted here, but we have the brand new EML 300B 2.5 volt solid plate tube which is a drop in replacement for existing 2a3 tube applications. Contact us at emissionlabs@gmail.com for more information and availability.

Thanks for the info that is helpful. I think I will go w/ the EML 2A3 + 5U4G for max tube-iness. I have a DAVE that I could switch to for clarity so this sounds like the most contrast from that.
Just ordered a new set of ZMF Verite headphones . 300 OHM Verite meets 300 OHM Stratus. Should be stellar sound like 300 OHM Sennheiser HD 800, 800S, 600, 650.. Once again, there is a wait time of 5 weeks since each ZMF is hand finished and assembled like DNA amps.
Hey all! Just picked up Koven’s Stratus in the emporium and have been trying to avoid work all day to listen to it. Even with stock tubes, WOW, music, musically delivered. There’s a wholeness of tone that I never got from my Mjolnir 2, even with good NOS glass, this is just miles better. Ok it’s new toy day and all, but I’m in heaven. The Stratus might be worth 3K just for the volume knob alone, best feel and precision of any I’ve used in 25 years in high end audio hobbying. What a wonderful work of art.
