NEVER use an adapter to go from 3.5mm unbalanced to 2.5/4.4 balanced. You can short out your DAP. This goes for any device, not just AK devices. Using an adapter to go from 2.5/4.4 to 3.5 is ok. To go balanced, you will need to replace the cables.

Depends. The balanced out provides more power output, so if your headphones need extra power, they would benefit from the balanced out vs. unbalanced. People also tend to feel the balanced out provides a warmer sound than the unbalanced out. The Sennheiser Momentum might not benefit as much going from unbalanced to balanced as they are fairly easy to drive. I do not have a pair, so I cannot comment based on personal experience. Quite a controversial question. Balanced doubles the power, but also doubles the output impedance. Some IEMs like my Shure SE846 sound better unbalanced and don't need the extra power. In general, if you aren't near the upper volume limit for your device, it's unlikely that there will be a noticeable improvement.

Yup, it's 1.6ohm on balanced vs 1.8ohm on single-ended for SR25.

I keep hearing about this "performance mode" in the sr25 for locally stored music libraries, but I can't find anything in the settings to switch this on.
Shall I assume that this is permanently on or am I missing something?

When discussing impedance, I like to think of it as resistance to electricity flow. Due to the design philosophy (bal vs. unb) and components (materials of construction selected during the design process) of headphones, IEM's, they offer more resistance to electrical flow and that is why the balanced port offers more power at a higher impedance. To attempt to meet the requirements of the higher impedance on some HP/IEM's... But...the impedance results from the circuit resistance (the headphone/IEM), not the device providing the power to the circuit (the player). The reason why impedance is specified on the player is to give information (in the form of specifications) to the user as to how much power the device can drive (provide) at a certain resistance/impedance... How can I login to WiFi network that need portal login like guest login page of Hotel WiFi? I never able to make the login page popped up so I can only do streaming at home or office.

Thank you for your suggestion but I tried but no notification of sign in to WiFi, I found such in Android phone but not on my SR25, if SR25 have basic web browser I still able to enter captive portal via gateway ip https://mashtips.com/solve-wifi-login-page-not-loading-issue-android/
