I have no experience with Bluetooth.
 
Is there such a thing as a good-sounding audiophile IEM for, say, using in connection with iPad?

Usual Bluetooth standards though aren't really up to audiophile quality. I believe more "recently" (i.e. past year or two?) attempts have been made to come up with a standard piggybacking off the Bluetooth protocols.

Have a look at apt-X. I believe Sennheisers have some Bluetooth models that support apt-X. But it requires the matching pair to support apt-X too. Something I believe the iPhone/Touch/iPad doesn't (but the MacBook Pro does?).
