From what I've heard, the AD700 beat the HD595 on every level, except for maybe comfort, and bass. I do NOT want thumpers, but I like to hear the bass in a track, just looking at the response graph on the AD700, they appear as if they will have several bass roll off, and I'm curious how negatively this will affect the music. Also, if the AD700 are notably sibilant, I'm taking them out of my list of options.

You can hear the bass in the tracks on the AD700 just not really feel it. Sometimes you have to really listen for it though. Also they are bright in the highs and are quite sparkly sounding.  Personally I find the MS-1 and especially the DT440 superior for music.  DT440 isn't sibilant nor is its bass nearly as rolled off as the AD700.  It also doesn't lack soundstage like the MS-1. Comfort unfortunately isnt the best though.

I would call my ad700's crisp and not painfully sibilant.  If you're willing to EQ the bass up a little bit they are really great cans.  I don't know how anything could be more comfortable than these things either.  I have worn them for 8 hours at a time and had no problems.

I'm pulling everything except for the AD700 and HD595 from my list, both are within my budget, both are what appear to be the top contenders, everything else, from what others have said, are either too bassy, or too sibilant for my tastes. I just saw the graph and I was disappointed with how the frequency drops at around 90 Hz

I asked for information on the AD700, I've resolved that I either want the AD700 or the HD595 depending on which one sounds more natural and flat (not rolled off), and hopefully more detailed.

If your talking bass like the groove,thump of it or the thump of bass drum the AD 700 has no bass.
 
If your talking hearing the bass from bands who play it in a way it can be heard pretty much no matter what like say Uriah Heep,Rush,Thin Lizzy then yeah they have bass I guess.
 
Some bass can only come out when something brings it out though.
 
 
I had the AD 700 for a bit.
They are bit treble heavy not extreme but its noticeable.
And they lack in mids not so bad it sounds weird though.
The soundstage and how distant some stuff was and empty with air is what made me get rid of them.
Besides having no reason to listen to them since I had better headphones as well.

The HD595 has the more extended FR, and to me it also sounded more natural. I've never heard full size headphones, open or closed, that are as light and rolled off in the bass as the AD700.
 
Back when I had HD595, I was wearing it after starting the movie The Matrix and was still walking around getting ready. And I heard a sound like an earthquake or stampede coming - really low - I freaked out for a second until I took the headphones off and realized the sound was from the movie... lol. There's no way the AD700 could have done that.
