How could you do DIY shielding for a portable headphone amp?
The cheapest form of shielding is separation, so keep the phone as far from the amp as possible. The pickup may not be radiated emissions anyway, it's more likely inductive if you have the devices in close proximity. Or just put the phone on 3G when you're using it for music.- wakibaki

You can't do it. The phone has only 2 output channels. This is a hardware limitation, there's no good reason to have more. You need a device that commonly has 4 or more output channels. Like a desktop computer with onboard sound.- wakibaki
