Looks like we're all getting away with multiple picks, so:
Shostakovich 8, 10 and 13
Sibelius 5 and 7

Beethoven's 9th of course.

I don't listen to it much anymore (heard it so much), but of all the symphony's, it's still gotta be pinnacle - Mozart's 40th too.

That being said, I listen more often to Mahler and Shosty's.

Ditto!

If I were to pick a movement, then I would say the First movement of the M9 was my favorite.

i much prefer 2 and 8 and even 3 over 9, but for 9, the last movement is my favorite.

Beethoven 3rd "Eroica"

Sort of surprised no one has mentioned this one yet.

I would have to list 50 symphonies from about 15 to 20 composers, and then say my favorite was the one I listened to last. That would be Shostakovich's symphony number 11.

If there can be only one (impossible, as you well know) then Shostakovich 10. I cannot imagine living without:

-- Mahler 3
-- Brahms 2, 4
-- Mendelssohn 3 (Scottish)
-- Beethoven 6, 7
-- Mozart 40
-- Sibelius 5
-- Tchaikovsky 5
-- Vaughan Williams 3
-- Spring Symphony by Britten

On the other side: famous symphonies that, so far, have not yet spoken to me:

-- Mahler 8
-- The two by Elgar
-- All Bruckner, except maybe B8
