It would be better to use cheap ethernet wire.

You need at least 3 conductors (right, left and ground), so you'd need two runs of the speaker cable. Also the gauge is not ideal, you should be using ~24 gauge wire for headphones. The Ethernet wire will have this, or you could get some Mogami or Canare starquad wire.
