Just got mine to come in and I'd say they did a pretty good job.  Submitted my logo as a vector .ai file and it came out pretty much as I expected to.

Is there anyway V-Moda will allow me to make custom shields using the chicago bears logo? I saw on their instagram account the pro teams requested some for their players...http://instagram.com/p/iT-pxkAS10/
 
Is there a work around? modify the logo slightly?

Most likely they will not let you do it, all of the team logo ones on their account were ordered by the team so there was no copyright issue. 
 
That being said the worst that can happen is you submit your artwork and cross your fingers, might want to have a back up design though.

I don't have first hand experience, but I would imagine they would either request a different design or simply refund your order.
