Snails can go very wrong very quickly. I remember we used to get a big tall can of the escargot, and my father had difficulty getting a consistent result cooking them. I can't quite recall what it was he said never to do (maybe simply don't overcook them), but he told me that the difference between getting them right and ending up with nasty tasting mush was pretty slim. I can distinctly remember them coming out this way at least once, so I know what it's like when they don't come out right.
The last time I had snails was at a causal upscale diner called Atlantis that (alas!) closed years ago. They had little bread-like things a bit like flaky biscuit strips over each shell, and I'm pretty sure they used wine in the butter garlic sauce. They did a good job with them.
Shame about that place, really--they had the best fish and chips I'd had up to that point, and I can't remember anything I tried being less than very good. It seems like places like that are closing all over these days.
