How about some bluegrass? Maybe some folk and instrumental guitar? A great place to start is with Leo Kottke's 6 and 12 String Guitar album:

This album is a classic and has huge crossover appeal. Even if you're not generally into this genre, please give it a listen. It's a little like how Kind of Blue or Time Out can turn people into jazz fans - it is that good.
