Good, concise, to the point, question.
 
Symphonies: 1. Floor system 2. HE-560
String and wind chamber (quarts/quints): 1. HD650 2. HE-560 3. Floor system
Chorals, large scale: 1. Floor system 2. HE560
Opera: 1. Floor 2. HD650
Vocal recitals: 1. HD650 2. Floor system
Piano sonatas (i.e. solo): 1. Floor system 2. HD650 or 560
Piano concerti: 1. Floor system 2. HE560
Violin sonata and concerti: 1. Floor 2. HE560

I've come around to the HD650's presentation of classical. I listen to mostly chamber music. I don't mind it with symphonies either. 
It's relaxing and less distracting especially when listening and working/studying at the same time, not to mention its lovely tone. There are times when I want that. There are also times when I can't be bothered to switch headphones.

It must be a strange existence when you have to keep like a cheat sheet to know which headphones to use based on what you're listening to. I can't imagine what happens when you have music that crosses genres. O_o

pick as you go, in my experience.
 
with classical music, crossing genres is rare, in my experience. if it happens, I do this:

I've never had any problems since I installed the Classical Music Mod on my HD 650's. Everything's great now.

Cheat sheet not needed for me, most headphones will work for most genres of music for me and I usually have my two DACs and three AMPs on with three or four headphones connected so its easy to switch.  Typical would be:
BH Crack with either HD650, HD-800 or DT-990
Lyr2 with LCD-2f, HE-560 or HE-400i
Ember with HD-700, TH-600 or HE-400
Teac UD-301 headphone output with SennGrado, EL8 open, X1 or K7XX.

I just can't be arsed with it any more. I do like it but there's so much good new music out there that I so rarely have the time for orchestral pieces these days.
