Resources to learn about DAC design, topologies, filter design and all that?

Oh yes, Texas instrument has shared a lot of documentation online on DACs also(admittedly most are somewhat dated now, but it's a rich resource to get at least some basic diagrams and info around it, I think).
They won't give up their internal secrets, but they usually provide their suggested implementations for good specs with their DAC chip, so you should find good intel on the surrounding circuit.

Otherwise, we're now in the era where one chip does it all or almost all, so, relevant circuits are really unlikely to tell much of what is going on under the hood. For old R2R designs, sure, but for delta sigma, I guess you'll find mostly 2 or 3 hyper popular chips put together and doing just about everything from USB to analog output.
