I'm running a 2500K stock with a Radeon 7770.

I was monitoring my power usage yesterday whilst playing Civilization 5 maxed out. Peaked at 180W and that's with my monitor and amplifier(speaker amp,) and DAC also running off the power meter. 90W browsing/watching youtube and about 70W doing absolutely nothing. Turning the amp on and off(whilst not listening to anything) showed that it uses about 10W, so you'd be looking at about 155-170W gaming on a computer like mine. Let me know if you want me to do some stress testing and monitor it some more.

The GTX750 Ti is bang for buck of mining and performance. If next gen nvidia Maxwell is going to be like this, it will be the matter of time nvidia cards will hold the crown in the mining community as well as general gaming performance.

750 Ti with AMD's current prices is definitely a good bang for your buck, but if it were based on AMD's MSRPs for their cards, then the 750 Ti would not fare so well.
 
It's more suited to a PPW (power/performance per watt) rather than a BFYB title.

Well the mining boost on the 750 Ti is just a freebie thrown in. If I didn't already own 2 4GB 680's for 4k texture gaming I would go for 4 750Ti's just for sake of decent performance for money and bit of mining. But given how craptastic crypto currency is going now I'm not so sure. It will be a matter of time till ASIC miners will dominate the mining community like it did with bitcoins, soon litecoins and wouldn't be surprised dogecoins soon or any other future meme based coins.

I'm so mad they are so stinking expensive on a nice note I got some nice new 1080p screen shots while playing ARkhma Aslyum yesterday, new desktop screens YAY
 
additionally my new 7870 is working very nicely with PSx2, ps2 emulation is improved by a fair amount, Gamecube emulation saw only a very small increase... I've yet to try Wii emulation as I don't have concsistent internet atm, so no place to sit and snatch a 7gb file

For the $?  They are alright I guess.  Its a pretty easy experience getting everything running out of the box.  I actually really like Chrome OS, its minimal and elegant.  You can run full Microsoft Office if you are savvy enough ;)

I actually had the C720.  Its a lot better looking online, and not so premium out of the box if you know what I mean.  Its still pretty good for $200, but the storage is abysmal.  Really have to rely on WiFi, unless you intend on upgrading space.
 
If you would not mind a tablet, I recommend the Blackberry Playbook.  Cheap, Premium, and Zippy!  Its really a nice all around experience.

750TI can not be put in SLI.  Even lacks the connector, so unless Nvidia is going to go R9 and send the info across PCI-E than there's no hope for it being able to be used as such in the future either.  Even if you could SLI them, don't know if 4x SLI would be that useful; would cost ~620 USD or ~110 USD more than what a single 780 would cost.  Add in that 3 way 760 SLI barely edges (less than a fps) out a single 780 in Metro Last Light and the 750TI is only ~3/4 as powerful, you're going to pay more for similar performance and most likely more power consumption.  Throw in the SLI issues and I think you'd be better off going with the single card.  Plus the cards you have now slap around the two previously mentioned options.

Well the reason I'm eyeing the C720 specifically is that it has the 4GB model that I can snag used, it's fairly simple to upgrade the storage once you get the back off, and I can get OS X to work on it quite smoothly. Snag the Chromebook for $200 used, put in a 128GB SSD for $99, add OS X and I'd effectively have a small, relatively decently spec'd $300 machine.

Sounds like a plan!  You might want to give ChromeOS a chance, because it is not so bad.  Mac might be a pain for certain hardware, especially the WiFi
