The Mission and The Good, The Bad and The Ugly by Ennio Morricone; Crimson Tide or anything by Hans Zimmer; and there's this LP I picked up on E-Bay that was pressed in Japan with all the great Spaghetti Western songs.

One of my favorite all-time OSTs has to be the Fight Club soundtrack by the Dust Brothers. That, and the Virgin Suicides soundtrack by Air.
