"Music for Airports" by Eno (and also the Bang on a Can version) and "Trinity Sessions" by Cowboy Junkies have already been mentioned, but I'm here to second them both, especially MFA. I feel that if I had a pair of headphones on playing "1:1" I could walk through the fiery depths of hell and come out unscathed. The most beautiful music I've ever heard.
Mozart's Requiem (Herreweghe's version is my favourite so far).
Barber's Adagio for Strings (I've only heard the one from the Platoon soundtrack.)
