"Music for Airports" by Eno (and also the Bang on a Can version) and "Trinity Sessions" by Cowboy Junkies have already been mentioned, but I'm here to second them both, especially MFA. I feel that if I had a pair of headphones on playing "1:1" I could walk through the fiery depths of hell and come out unscathed. The most beautiful music I've ever heard.

Mozart's Requiem (Herreweghe's version is my favourite so far).
Barber's Adagio for Strings (I've only heard the one from the Platoon soundtrack.)

Jan Garbarek with the Hilliard Ensemble. Solo Sax with an a cappella men's group. The Hilliard Ensemble is world renowned for performing rare and obscure vocal tracts from various parts of the world ranging across a myriad of ages. Jan Garabek's solo sax becomes the 6th voice in the ensemble for some hauntingly beautiful music.
