This may or may not be your cup of hot coco, but you should try Lems. Truly wonderful stuff. http://www.youtube.com/watch?v=4lSqdnhUkro

I can also wholeheartedly recommend Emancipator (http://www.youtube.com/watch?v=7YYIFCE_REs), Yann Tiersen (who I recommend to everyone at every possible occasion; http://www.youtube.com/watch?v=j1LPj9msobY), some Penguin Cafe Orchestra (http://www.youtube.com/watch?v=7xfcMQHNnOk) and the entire Buddha Bar CD-collection, although some of the better songs have vocals (http://www.youtube.com/watch?v=P48J8bJ8vjc). Also, browse OCRemix for hidden diamonds (http://ocremix.org/remix/OCR00691/), recommended especially if you're into videogames.

You already mentioned Pachelbel's Canon in D Major, but it's definitely worth a shot to try out Brian Eno's three variations of it, entitled "Fullness of Wind", "French Catalogues", and "Brutal Ardour". It's basically Canon in D but with a much more ambient feel. Extremely soothing.

Thank you to those who recommended Biosphere and especially Liquid Mind! I'm trying those now.

I've found that personally, I sadly had to discard 90% of the recommendations in this thread, because either the music wasn't harmonious enough or the instruments weren't. I even had to cut Pachebel's canon out of my playlist because of the volume increase at the end, and I also had to cut Albatross because of the baseline (which oddly should be the most comforting thing about that song, but apparently not to me, when I'm trying to sleep), so I guess I'm overly sensetive when it comes to these things.

This caught my attention... I had that remix ages ago, actually, which reminded me to search for another one I remember being very ambient and good... Zoids as remixed by o2:
