Garlic should never be cut or chopped. To really bring out its flavor it needs to be mashed with a very small amount of salt.
You need to squeeze out the oils.
If you are really crazy cut into paper thin slices using a very thin knife or a razorblade and use those flakes on some olive oil on a frying pan ... the garlic will melt with not much effort
Add chopped onions to the oil-garlic mixture and stir till golden brown.
Then add some oregano (fresh if possible) and mix for some time.
For some ZING add some finely chopped dried red pepper to the mixture and stir on low flame.
Later add some chopped spring onions to the mixture above till they turn almost reddish - brownish.
Then add some fresh tomate paste and a lil more sugar and salt to the mixture and mix till nicely hot. Taste to see if everything is to your preference.
Not too long other wise the paste will become a liquid.
Add your fav. pasta with meat and veggies if you like. Garnish with parsley etc. if it's you preference and eat away after the whole mixture together is properly warmed up
