A little update:
 
I sent Head-Direct an email asking if 56.5/61 ohms were normal for the HE-500, and this was the response:

Would be interesting to hear one with higher than normal impedances to determine if there are any advantages/disadvantages.  I guess you'll hear the difference when your new one arrives.  Regardless of numbers, have you been enjoying them?

Yeah, they sound good, but what if they're inferior? I'd never know. It's a weird spot to be in.

This is a very good professional attitude expressed from HifiMan! Now, if they'd tell us about the limits of impedance that define 'normal', it would be great! 
 
Please, if you receive your replacement, inform us for any SQ changes.

If the difference will be anything like the pair I heard, it will be apparent. Not night and day of course, the 'character' of the HP remains the same, but the 'flawed' pair was less refined (more distorted maybe?) and probably had more energy in mid-high frequencies.

They've asked me to send the headphones in for replacement. I'll ship them out tomorrow and keep you guys posted.

The whole process should take almost exactly 2 weeks if you try to keep in touch about updates about it via email. That's what happened with my HE400 replacement. 1 week to ship to them and get the replacement order processed, another week for new pair to ship all the way from China.

Got my HE500s today and I'm not sure if I like them..
Out of the box, they controlled sub-bass superbly.. and the mids were creamy... but the >~2kHz, the frequencies seemed a bit nasal and recessed to me.
After I applied an eq in Foobar, the sound is a fair bit better; less nasal and more highs... but I'm not convinced these are 5x better than the Shure SRH840s which are now only $149AU.
I will check the Impedance of the drivers with my friend's multimeter, will burn the HE500s in for at least 50 hours, then will take them to addicted to audio to compare them with the LCD3, SRH840s and grado RS1s with accompanying EQs..
I only committed myself to spending $700 knowing that I have 30 days to try them.

That is the region I had problems with, but burn in did alleviate the problem. That and I got used to the new sound signature. BTW, interesting way to look at the FR graph to see what frequencies to EQ.
